Tasting Notes: Calcrete is unique to the limestone-rich appellation between Bonnievale and Robertson, formed from arid shale rock and ancient petrified maritime deposits. It defines the terroir with crystalline minerality — a taste of wet stone, saline sea spray, and oyster shell. The style is elegant, linear, and minimalist: bright, vibrant, and limey, with luminescent lime-green radiance. On the palate, a revitalising coolness, mouth-watering tension, and steely precision, with notes of gunflint and lime. Pure and brilliant minerality — an irresistible invitation to take another sip.
Soil: Chardonnay vines rooted in limestone and mineral-rich Calcrete soil on a south-facing slope, exposed to the cooling southeasterly breeze.
Vineyard: Carefully managed for aeration and indirect light in the canopy, preserving vibrance in the Chardonnay bunches until harvest in the crisp early morning.
Winemaking: A minimalist approach. Hand-picked in the early morning and whole-bunch pressed. Clear free-run juice of brilliant lime-gold colour. Unoaked, cold fermentation, with three months of lees contact.
Analysis: Alc: 13% | TA: 6.9 g/l | RS: 2.6 g/l
Food Pairing: Seafood, salads, and lightly roasted chicken
